A ‘Blanc de Blancs’ is a French term that means “white from whites”, and is used to designate Champagnes made exclusively from Chardonnay grapes or in rare occasions from Pinot blanc like Cuvée ‘La Romane‘ from Champagne Michel Furdyna.

Champagne Colin ‘Blanche de Castille’ Brut – 100% Chardonnay from Vertus and Vertus les Bergères amazing terroir.
This cuvée is crowd-pleaser! It has a pale yellow robe, fine foam and good persistence. A beautiful minerality on the finishing! It is constantly voted favorite. They work with a perpetual cuvée (20 years old) and use 60% of it as the main wine in their cuvée!

Champagne Pertois Moriset ‘Les Quatre Terroirs’ Grand Cru Extra Brut – 100% Chardonnay from the best 4 Terroirs as its name is indicated: Le Mesnil sur Oger (60%), Oger (20%), Cramant (10%) and Chouilly (10%)
This is a MUST TASTE cuvée, it has a very elegant colour with golden hues and a powerful nose with a sophisticated style of dried fruits. It is subtle on the palate with an elegant smokiness and creaminess.
Pertois Moriset vineyards are located in Le Mesnil Sur Oger and are cultivated with minimal treatment and with maximum respect for the environment. The vines are mature, on average 30 years old, with two-thirds situated in the Côte des Blancs, including the four Grand Cru rated villages of Cramant, Avize, Oger and Mesnil. Pertois Moriset is now a member of the prestigious Club Trésors de Champagne!
Reserve des Champs de Nummus – Organic – AOP Limoux
Organic Wine
A complex, mineral nose with which are mingled hints of ripe fruit, flowers and spices. Full and lingering on the palate, firm, rich, and of great elegance. The silky finish reveals a nice freshness, but also a laying-down potential of at least 5 years.
The wine is named after the numerous Nummulite fossils to be found scattered over the vineyard. The ‘High Valley of the Aude’. A block of 12 hectares of Chardonnay planted in 1972, lying at an altitude of 400-450 metres and facing S/S-E. The sub-soil is limestone clay, and the gravelly top-soil is black, and rich in shale and pebbles. These Chardonnay vines face the Pyrenees. The combined effect of the soil,full exposure to the sun and wind, and the altitude create an exceptional micro-climate favouring a slow and lengthy ripening process.
