Crémant Zeyssolff Brut – 40% Pinot Blanc Auxerois, 40% Pint Noir, 20% Pinot Gris
Crémant is sparkling wine elaborated with the same traditional method as Champagne. The grape varieties we use to elaborate Crémant come from our vines in Gertwiller and Heiligenstein and are Alsatian grapes (Pinot Blanc and Pinot Noir). Crémant has a great personality and a growing reputation.
It is a party wine with luminous colour, with fine bubbles. The nose is fine, with brioche and white fruits notes (pear, apple). The blend of two grape varieties, Pinot blanc bringing roundness and lightness, and Pinot Noir with structure and liveliness make it an aperitive easy to match and to enjoy. Its delicate effervescence brings a pleasant freshness and a great structure in the mouth.
Terrasses du Larzac AOP – Les Chants de l’âme- – 30% Carignan, 30% Syrah, 20%Grenache Noir, 20% Cinsault
SOIL clay-limestone soil
Winemaking – vinification in steel vats at controlled temperature, short to medium vatting period with yeasting. Light pumping over daily and punching of the cap at the end of fermentation. Ageing in part in an ovoid vat of cement allowing dynamic microoxygenation of the wine like through a barrel but by conserving the fresh fruity profile
Colour – with purple tones
Nose – a very expressive nose, fruity-floral with notes of blackberry jam and violet syrup
Palate – complex palate with a very good acid balance and silky tannins, the finish is spicy-floral with notes of Sichuan pepper SERVING TEMPERATURE 16-18°C Accompanies veal blanquette, Italian cold meats, smoked duck or truffle omelette.
